Don't be fooled by its robust and gnarled appearance. The flavour and scent of yuzu are as subtle and delicate as its appearance is unique. A hybrid between a mandarin and a Chinese lime, yuzu, the size of a large orange, originates from East Asia. Primarily consumed in Japan, it is increasingly appreciated by Western gourmets for its tangy flavour, a cross between lime and grapefruit. Not very juicy, it is mainly valued for its zest and, of course, its essential oil.

Indeed, unlike most citrus fruits, yuzu is distilled and not expressed. It is therefore an essential oil and not an essence. The advantage? It loses its coumarins during distillation and is therefore not photosensitizing like its lemon and orange cousins.
