A hybrid between a mandarin and a Chinese lime, yuzu, the size of a large orange, originates from East Asia. Primarily consumed in Japan, it is increasingly appreciated by Western gourmets for its tangy flavour, a cross between lime and grapefruit. Not very juicy, it is mainly valued for its zest and, of course, its essential oil.
