What is dune pepper?

Dune pepper, also known as alder, is a forest ingredient widely found in northern Quebec. This shrub, which can reach three meters in height, produces catkins (botanical term) as flowers; this is the part harvested for haute cuisine. It can be consumed freshly picked or dried, and is generally found on the market dried and whole.

Its natural habitat

Dune pepper is found throughout eastern North America, especially in Canada. It prefers moist, nutrient-poor soils, such as rocky sites, sandy areas, level terrain, and mountains. The shrub also grows well near marshes, streams, lakes, and rivers. It can be harvested during all winter months, but it is recommended to pick it towards the end of autumn for peak flavour.
