The Miyabi Kaizen II 5000FCD Santoku knife 7" is a versatile, all-purpose kitchen knife that blends traditional Japanese design with advanced steel technology. Perfectly suited for slicing vegetables, fish, and meats, its flat-profile blade and ultra-sharp edge make it a favorite among professional chefs and home cooks alike.

At its core is FC61 fine-carbide stainless steel, known for its impressive hardness, edge retention, and chip resistance. The blade is clad in 48 layers of stunning flower-pattern Damascus and undergoes a double ice-hardening process (Friodur®) to enhance durability and corrosion resistance. Finished with the Honbazuke hand-honing method, the edge is sharpened to an exceptional 9°–12° angle per side for precise, scalpel-like performance.

The D-shaped black pakkawood handle is designed for ergonomic comfort and control, featuring a stainless steel end cap and elegant mosaic pin. Handcrafted in Seki, Japan—one of the world’s most respected knife-making regions—this Santoku knife exemplifies quality, balance, and beauty.
