Extracts from Aspergillus oryzae are rich in prolyl endopeptidases and dipeptidyl peptidase IV (DPP-IV). DPP-IV is a multifunctional serine protease that targets proline-containing peptides, such as those found in gliadin and casein, two proteolysis-resistant proteins. The proteolytic activity of Aspergillus oryzae targets the proline-rich 33-mer of gliadin, possibly the most immunotoxic peptide derived from gliadin. Proline-rich antigenic and immunomodulatory proteins present in gluten are thought to trigger an inflammatory response in individuals with celiac disease or gluten sensitivity.
